Few years ago we got Bread Maker from my parents. We use it from time to time to bake nice fresh bread… and as you know we like to experiment. I take recipes from the book “Baking in a bread machine” by Jennie Shapter. Sometimes I swap or add new ingredients. I like to use various flours, grains, toppings, nuts, fruits and other additional ingredients.
Today for the first time, I’m baking sweet bread. Use BAKE or CAKE ONLY function, if you have one in your bread maker. BAKE setting allows you to use the berad machine as an oven. CAKE setting can be used to mix and bake cakes.
Ingredients:
200g plain flour
2 tsp baking powder
pinch of salt
70g brown sugar
40g chopped pecan nuts
35g almond flakes
2 tsp instant coffee
25g melted butter
100ml milk
2 lightly beaten eggs
Method:
If you can, remove the kneading blade from the bread maker pan. Sift the flour, baking powder and salt into large bowl. Stir in the sugar, pecan nuts and almond flakes. Dissolve coffee with 1 tbsp hot water in a cup. Add coffee, melted butter, milk and eggs to the dry ingredients. Beat thoroughly to mix. Spoon the mixture into bread maker pan. Set bread maker for BAKE ONLY (light crust if possible) settings and bake for 50-60 minutes.
My bread maker is quite simple – it has only 3 settings: Basic, French and Wholemeal. I didn’t remove kneading blade and baked in French Mode (next time I will try Basic Mode). After 50 min I checked my loaf with the skewer. It came out clean, so I simply switched off bread machine and removed bread pan to cool for 5 minutes.
If you don’t have the bread machine, but still want to bake American Coffee Bread, try to bake it in small loaf tin in the oven for 50-60 min at 180 C.
