Stuffed Sweet Potatoes

I follow few healthy lifestyle bloggers on Instagram and Facebook. They are an amazing source of nutritious, delicious and exciting food recipes. Most of the dishes are really easy to prepare and usually most of the ingredients I have already at home. Last week Joe Wick inspired me to prepare Stuffed Sweet Potatoes… and they were so yummy!

Step 1:

Clean thoroughly 2 medium sweet potatoes. Cut each potato into 2 halves. Place them on the baking tray upwards. Put in the oven and bake for about 40 – 50 minutes (depending on the size of sweet potatoes), until the knife smoothly enters the pulp.


Step 2:

In the meantime prepare filling of your choice:

Option 1: with spinach and feta (or ricotta).  Fry spinach for few minutes, put to the bowl, mix with pepper and garlic powder, add feta (or ricotta), and mix gently.

Option 2: with mushrooms,onion and pancetta (or bacon). Start with frying pancetta, then add finely sliced onion, and finally mushrooms. Transfer to the bowl and mix with spices – pepper, paprika, mixed herbs.

Option 3: with mincemeat and tomato sauce. Fry mince meat for few minutes, add tomato sauce and spices.

Step 3:

Take the baked sweet potatoes out of the oven. Remove about 2/3 of the sweet potato flesh, combine with your filling and mix gently. Scoop your filling back to potato skins, add mozzarella on the top and bake for 7-10 minutes in the oven with grill function or fan in 180 C. After baking you can sprinkle with fresh herbs and serve with natural yogurt dressing 🙂
