Chocolate – beetroot cake

Have you ever tried chocolate – beetroot cake? I know it doesn’t sound too appealing, but it is really delicious! Rich, moist, chocolatey cake and you can’t really taste beetroot in it. What I like the most… it is great way to sneak more nutrition into diet… in form of chocolate cake!! Let’s see:

  • a source of folate, fibre and potassium
  • low in calories

Plain Chocolate

  • a useful source of iron, magnesium and potassium
  • may lower blood pressure

250g of dark chocolate
3 large eggs
170g of muscovado sugar or your favorite sugar substitute
100ml sunflower oil
1 teaspoon vanilla extract
100g flour
1/4 teaspoon baking soda
1/2 teaspoon baking powder
60g ground almonds
250g raw or roasted grated beetroots

handful of almond flakes to sprinkle on the top

approx. 25g melted white or dark chocolate to drizzle on the top

Brake dark chocolate into pieces, put into a bowl and put over a pot with steaming water. Dissolve it until it’s shiny. Set aside to cool slightly.

Beat eggs with sugar, then add oil and mix again. Add vanilla extract, sifted flour, baking soda, baking powder and ground almonds. Mix all ingredients very gently with a wooden spoon. Squeeze the excess juice from the grated beetroot. Add melted chocolate and beetroots to the cake mixture. Mix the whole thing gently.
Preheat oven to 180 C, transfer cake mass to loaf tin (lined with baking parchment). You can sprinkle almond flakes and bake for approx. 60 min. At the very end, check with a wooden stick if the cake is ready. Then remove, cool it down and if you want – drizzle with melted white chocolate on the top.
