Only few days left to New Year’s Eve! We like to celebrate at home, throw small party for friends, dance, drink and of course eat! I would like to share with you three ideas for my favourite party snack food 🙂
Koreczki – food on sticks
These look fancy but are super simple.. Honestly, you can use whatever you want, e.g. cheese cubes, salami, olives, cherry tomatoes, grapes etc.Now just take cocktail sticks and mix and match your ingredients. Feel free to try your own combinations.

Spinach Rolls
Ingredients:
350 g frozen spinach
3 cloves of garlic
3 large eggs
1/2 tsp salt
1/3 tsp nutmeg
200 g sliced smoked salmon
soft cheese with herbs
Method:
Defrost spinach and squeeze the excess water on a thick sieve. Combine it with yolks, salt, grated garlic and nutmeg. Beat egg whites until stiff, add them to spinach and stir gently. Line baking tray (28×40 cm) with baking paper, lightly grease it and pour a spinach mass onto it. Bake in 190 C for 20 minutes and then leave to cool down.
Remove baking paper from the spinach cake. Spread soft cheese on top of it, put salmon on the top and roll up tightly in a roulade. Then, wrap with foil and put in the fridge for 2-3 hours. Before serving, cut into slices.

Paszteciki – small pastries
Ingredients:
4 cups flour
250 g butter or margarine
3 eggs
1/3 tsp salt
1 tbsp sugar
50 g fresh yeast
1/2 glass sour cream
Method:
Stir yeast and sugar until liquid, leave for few minutes. Sift flour with salt, add cold butter, rub with your fingers. Add eggs, sour cream, liquid yeast and knead the dough. i should be flexible and smooth. Divide into 8 equal parts, roll the out into rectangle, put stuffing*, roll up into tight roll – the edge should be underneath. With a sharp knife, cut the roll into small pieces. I put them loosely on the baking sheet, using small brush spread egg yolks or milk on the top of pastries, then sprinkle them with sesame seeds or poppy seeds. Bake them in 180 C for approx. 20 min.
*for paszteciki filling, you can use fried mine meat with onion and spices OR fried mushrooms with onion and spices. I like to use spinach&feta filling – fry spinach, squeeze the excess water, add pepper, garlic powder, blend it, add feta and mix together.
